Sale Salmon!

It’s probably clear by now that I LOVE a good deal. Like seriously, LOVE LOVE LOVE a deal :) After Matt got off work we went to pick up a few things for his parents visit this weekend. I got bored looking at pork roasts so I wandered down to the fish section. And there is was... Salmon for basically free. Now I love salmon almost as much as a good deal (for example: my bestie Kate threw me a bridal shower and there was salmon in everything! SOOOOOOO delicious!!! Yumm!). Anyway... so the best before that was tomorrow so we decided to make salmon something for dinner. After the discount, we got about 0.5kg for only $1.09! I love Overwaitea <3

Once home, we decided on a baked salmon alfredo pasta. Matt was starving so I tried to cook as fast as possible while he cleaned the house a bit (I’ll take cooking over washing the floors any day!). I found recipe for salmon and winged it a little... I threw the salmon in a baking dish, then added 1 ½ tbsp white vinegar, 1 ½ tbsp orange juice (I didn’t have any lemon juice), 1 tsp basil, and 1 tsp parsley. After giving it a little mix, I hucked it in the oven for 15ish minutes at 425°. I think I might try this with canned salmon and see if it works...

We didn’t have any canned alfredo sauce so I had to make it from scratch. Since we didn’t have any parmesan cheese ether I just used equal parts cheddar and mozza. It’s super easy to make... just melt a little butter in a pot, add 1 cup of flour, then 3 cups of milk. After its completely smooth throw in the cheese, some S&P and minced garlic.

Everything kind of happened all at once... which NEVER happens haha :P The pasta was ready at the exact time the sauce was finished and so I just mixed everything together and poured it into our FABULOUS kitchenaid cast iron pot <3 Then it went into the oven to heat up for 15 minutes.

I wish this blog could be a scratch and sniff because it smelt AMAZING!

Matt didn't want to wait so I pulled it out a little early but it was delicious anyway! I am soooo in love with the salmon.... the sauce and pasta are ok too :P

It's official... I'm a Housewife!

So the last 5 months have been a little crazy... I finished my last semester, planned a wedding, had an amazing bachelorette weekend in Whistler, got married (WOOOOO!!!), went to Mexico, watched my HUSBAND cross the stage, moved across the province, painted our new place (o.m.g. it took forever), flew home so I could walk across the stage, drove back and have been unpacking and cleaning ever since. Matt started work a few days ago (my brilliant engineer <3 <3) so I've been housewifing it up. I honestly didn't think organizing, cleaning, 10 million loads of laundry, ironing and cooking would take so much time! That god I have a week until I have to think about jobs again so I get all this shit done :P 


For Matt's first day of work I wanted to make something special. The biggest problem is that we are broke and had very few things in the fridge to work with. The slightly smaller problem is that our kitchen was still half full of sandpaper, tape and other random painting stuff (although it's now sparkling clean and only full of kitchen related items). After staring at the pantry/fridge for a while I decided on sangria, salad, potatoes and whatever the cheapest protein was at the store. Just a note... we have a Save-On but it's called Overwaitea. I have never heard of this super random name before but my save-on card saved me big $$$$ so I'm just rollin with it. Does anyone reading this know which name came first??

Anywho... back to dinner... I bought chicken. Did I mention I am already missing Costco like CrAzY!! A 2 hour versus 10 minute drive is not the same :( I came home with my chicken and starting perusing pinterest, my favorite place to find random recipes. I found a photo of almond crusted baked chicken breast that looked delicious!!! And it just so happens we have almonds so I figured it was meant to be. At this point I made a big mistake... I read that they used a food processor but decided I could just chop them really fine. Wrong. It took me 25 minutes to chop all the almonds fine enough :( I need to buy a food processor (I've already picked it out... just need to bite the bullet and pay for it... urgh).

After I finally finished chopping the almonds Matt called and surprised me... he ended work and HOUR AND A HALF earlier then he originally thought and that he would be home in 20ish minutes. Bahhhhhhhh!!!!!!!!!!!!!!! That definitely threw a wrench in my schedule.

So I scrambled to start and finish prepping the potatoes.... By the way, these are not just any potatoes. They are the most amazing greek potatoes I have ever had in my entire life! One of my domestic goddess friends, Michelle, made them a few months ago. I stole her recipe and have been making them ever since. I've never made it exactly how it says.. just wing it.

Here's what you'll need for Greek Potatoes:
- 4 large russett potatoes (I used 8 smaller yellow potatoes that we happened to have)
- 1/2 cup olive oil (I generally do 1/4 or 1/3 and add more lemon juice and water)
- Juice of 3 lemons (or more.... )
- 1 tablespoon "Greek Seasoning" from Clubhouse (this is a MUST)
- 1/2 tablespoon salt
- 1/4 tablespoon ground black pepper
- 3 cloves finely chopped garlic
- 1 cup of water (add more if they dry out while cooking)

I quickly cubed the potatoes and threw everything in a casserole dish and mixed (shown below). I've used glass and ceramic dishes and they both work great.


The potatoes need to cook for approximately 1 hour. I've noticed that the time can vary greatly, I have nooooo idea why. Make sure you turn them occasionally and watch that the tops down burn. There should always be some liquid in the bottom, usually I just add more water until it covers the bottom 1/3 of the potatoes. They should be super soft when done.

Matt still wasn't home yet so I made a mad dash to get the chicken prepped so I could pop it in when the potatoes were done. These include all the changes I made along the way...

Ingredient's you'll need for Almond Crusted Chicken Breasts:
- 3 seasoned chicken breasts
- 3/4 cup roasted, unsalted chopped almonds
- 2 garlic cloves
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3 tablespoons extra virgin olive oil

Make a paste of the bottom 5 ingredients. Mine was kind of chunky but it would be smoother if you used a food processor. I seasoned the chicken breasts with a little Italian Herbs mix. Next time I would add some cayenne or something with a little more kick.

I pressed the chicken into the almond paste, flipped it, pressed again and then put them in a baking pan. I poured the extra almond mixture over top. After the potatoes were done, I lowered the temperature to 425 and threw the chicken in for about 30 mins until there was no pink left!!

Matt caught me making sangria when he walked in the door. This is another recipe I stole from Michelle (she is amazing). She gave it to me at my bridal shower and I had the chance to try it when she had us over for dinner. It was delicious! You can add whatever fruit and juice are handy. What I put in was slightly different from Michelle's.

Most delicious White Wine Sangria:
- 1 bottle white wine
- 2 cans pineapple palmbay
- 1 sliced orange
- 1 sliced white nectarine
- splash of orange juice

Michelle added some vodka (which definitely gave it more of a bang), white grape juice instead of OJ, and raspberries instead of nectarines. I think it will taste amazing no matter you add... It's my new favorite drink :)

Appetizer #1

Matt was still starving after having some sangria so I whipped up the salad early for a little snack. I have been obsessed with this salad. I've had at at least once a day since we came back.

Mixed Green and Goat Cheese Salad:
- Mixed greens
- Crumbled goat cheese
- Chopped almonds (walnuts work too)
- Dried cranberries (diced nectarines are yummy too)
- Vinaigrette of choice! We used a balsamic from the store.

Salad is super hard.. lots of technique goes into mixing haha. Here's a shot before the dressing went on...

Appetizer #2

The chicken was finally done!! And it was delicious! As were the potatoes... Yum!


After we ate dinner I decided to make one of Matt's favorite desserts - Peach Cobbler. I had never made it but I was also given this recipe at my shower. It's a Sturdivant classic.. Matt's Nana and Mom are pretty famous for it from what I hear. It's supposed to be easy but I made a few mistakes...

All the ingredients you'll need for Peach Cobbler:
- 1/2 cup margarine
- 1 cup flour
- 1 cup white sugar
- 3/4 cup milk
- 2 teaspoon baking soda
- 1 approx. 400 ml can peaches

Apparently the type of dish you make this in is VERY important. We got a kitchenaid cast iron for a wedding gift so I used it. First melt the butter in the dish. Mix the dry ingredients separately, then add milk. The first time I read the recipe wrong and added 3 cups of milk.... oops!!!! haha I guess I was getting tired. Pour the batter in the margarine but don't stir! Then pour the can of peaches in, juice and all. Again, don't stir!! Bake at 350 for 40 minutes or until the top is golden. Serve with or without vanilla ice cream. Soooooo yummy and easy to make and cheap!!! Definitely try this one :)

Soup! Soup! and more Soup!

It was a typical Monday, so... No class! Normally this means homework time (super lame way to spend my day off but such is the life of a student). I decided to procrastinate, another student talent, and make vegetable soup. I have a tendency to make 5 times as much food as I actually need. The bonus? LOTS of leftovers :) So after a quick stop to the store I got crackin...

Here are the main ingredients:
- carrots
- celery
- potatoes
- red and white onions
- head of garlic
- turnips (I have never eaten one or cooked with them before... this was my experiment for the day)
- diced tomatoes (I was lazy and used canned)
- peas (frozen or canned, personally I can't tell the difference in soup)
- corn (normally I use canned or frozen but... I'm an idiot and bought creamed corn instead... eek! another experiment!)
- canned mixed beans
- tomato paste
- pearl barley
- long grain brown rice and a little wild rice
- small brown lentils (any lentils work, whatever you have)
* I usually add cauliflower too but I forgot! Oops! *

(I added a bit more than what is shown above :P )

And here are the different seasonings I use (generally I just add, taste, add, taste, etc, etc until it tastes delicious!):
- lots of ground black pepper
- cayenne
- dried oregano
- dried basil
- soy sauce
- vegetable bouillon
- worchestire sauce
- tad of brown sugar
- occasionally salt (if needed)

If you're brave... try adding a little cocoa powder. It's my secret ingredient for chilli and some soups :)

I usually pre-slice/chop everything before hand so I can just throw stuff in when I need to. I started off heating a drizzle of olive oil in my giant pot. Then I threw in the crushed garlic and chopped onions, letting them sizzle until soft. I decided to pour in a little dry white wine to clean the pan and hopefully soak into the veggies.

Immediately after I added shredded turnip, carrots and celery. I let them cook and absorb the delicious wine for a few minutes. I have to mention the smell.. I think it might be what heaven smells like! So yummy :)

At that point I added the tomatoes, tomato paste, lots of water, veggie bouillon and wild rice. After reaching a boil I left it to simmer for 15 minutes or so. During this I discovered I had once again, forgotten to buy ground pepper. Every time I tell myself... "I will never grind this much pepper by hand again!!" and every time I forget (good thing I have 15 minutes to burn). Next I added all the remaining veggies, barley, lentils and rice. This is the point where I realized I bought creamed corn. I was going to abandon it but then I thought "what the hell.." and just chucked it in there with a little frozen corn. I think it was actually better (happy surprise!).


It continued to simmer while I added all my seasoning (make sure you don't add too much,  as the veggies cook they will add their own touch. You can always add more at the end). I have to admit... I love adding soy sauce, it gives such a great flavour (this is why you don't need to add much salt, if any). I also dump a ton of cayenne in, yum yum yum!


After about 40 minutes I had to run to the gym and left my mom in charge of turning it off (classic, haha). When I came home it was waiting for me on the stove :) It was thick with veggies and plumped up grains, definitely more like a stew than a soup. A few swigs of soy sauce and cayenne and it was perfect! I now have a full freezer of vegetable soup and a happy vegetarian friend. Oh man... I'm getting hungry just writing this!! YUM!

Our First Dinner Party!

Finally, 5 months after moving into a new place, Matt and I had people over for a proper dinner! Our good friends Brandon and Emma, who are also engaged, came over for a visit :) Kelsey and Ku drifted in and out throughout the night but I'm going to include them anyway.

 Our menu was basically a giant experiment. Here is the plan:
- Penne pasta with a tomato/spicy Italian sausage sauce (Matt tried to explain his vision for the sauce but I got lost and left this completely up to him). 
- Cheesy mashed potatoes with sausage and onions (You may be wondering what's with all the sausage??? Matt got a great deal on Italian sausage so there was plenty in his freezer)
- Ceasar salad with homemade croutons and dressing

After we arrived in Vancouver, Matt and I cut up and froze the sheet carrot cake and brownies (the topic of  an earlier post). I saved a few little brownies for dessert, in addition to the round carrot cake. Matt started cooking the sausage and potatoes while I got ready (what a fantastic fiance!!). Brandon and Emma came right on time.. so we got to chat while we cooked. 

One thing I need to put on our wedding registry asap is a garlic press! Oh god it took me FOREVER to chop and crush a whole head of garlic (but we did put it in the sauce, potatoes, salad dressing and croutons... yikers). Everything came together really well... The sauce turned out amazing!! One of the best pasta dishes I think I've ever had. The mashed potatoes were delicious.. a mixture of monterrey jack, sausage slices, garlic and sauteed onions. I was a little uneasy about the ceasar dressing (the raw egg freaked me out a little haha) but it turned out well... could use a little more zip though. My classic homemade croutons turned out ok.. a little under toasted but I was too impatient to wait for them to finish (I swear Matt's oven was out to get me on this one).

Dessert was great, although everyone was full so there was quite a bit left (more for the boys to eat and Brandon to take home). I can't wait to have people over again... actually... I can't wait to move into our own place and have people over. I wonder what will be next in my New Wife Project??

My Friday Ritual

So the end of the week means two things:

1. I get to go to Vancouver and visit Matthew!
2. I get to go to Vancouver and visit Matthew and must figure out what on earth I'm going to bring!

While at the gym Thursday night, I day dreamed about all the delicious things I could bake for him. After much thought I decided on carrot cake. This is not just ANY carrot cake. It's a carrot-zucchini cake with tons of crunchy walnuts and cream cheese icing. I made this a few weeks ago and it went over very well (I think a few of the boys became a tad bit addicted). On the way to the grocery store I decided to make brownies as well. Technically they are German Chocolate Squares (with chopped up Rolo's, walnuts, chippits and coconut). Do you see the need to go to the gym now? These are not thigh-friendly recipes :P I couldn't for the life of me remember how many carrots and zucchini I needed so I bought enough to feed an army, literally.

Friday morning came and I started my baking marathon (thank goodness it was a snow day! No school!). I started with the carrot cake... As I grated the carrots and zucchini I realized I bought wayyyyyy too many veggies. So what is the solution to this problem? Make 3 times the recipe! So for the next hour I grated veggies, chopped walnuts, mixed and mixed and mixed some more (have I mentioned how much I adore KitchenAid mixers yet??!!). I snapped a few pics between adding the many ingredients.



I wasn't quite paying attention... the flour went a little wild! haha


Lets just say 3x the recipe makes A LOT of cake. I ended up with three 9 inch rounds and a gigantic sheet cake. I hope Matt really really likes carrot cake because he's getting a lot of it :P 


At this point one of my bf's Kelsey came over and helped me make the cream cheese icing. Logically, if you triple the cake you need to triple the icing right? Lets just say me made a shit ton of icing. I ran into a little snafoo.. mental note people.. vanilla from Mexico is basically a billion times stronger than regular crappy vanilla from Canada. Needless to say I added half the amount and it was still too strong. I just threw in some lemon juice and zest and it was saved (thank goodness). I left one round at home for my parents and packed the rest to take to Vancouver. Here's a slice from the double layer cake I finished in Vancouver..


Matt's roommate Ku has been bugging me for months to make those brownies. I decided to, once again, triple the recipe. It normally makes a 9x9 but I used a 9x13 this time. These brownies are straight from the devil... rolo's, walnuts, chippits and coconut! Delicious! They are super fast and easy to make, especially when Kelsey does the hard work of mixing all the yummy bits in. As soon as they popped out the oven we were off to Vancouver! My phone does not do this justice..

Baked Tortellini

Now that school has begun, it's time to start making lunches again! I was out in Vancouver for the weekend and decided to experiment with the giant bag of tortellini in my fiance Matt's freezer. I went to the store with my partner in crime Kelsey and picked up the ingredients. As the pasta was cooking away, I sliced and fried some italian sausages until they were brown and delicious. Diced onions where then added to the pan and cooked to tender. After that I mixed the drained tortellini, sausages and onions in a large bowl with a vodka pasta sauce and shredded monterey jack cheese. I poured the mixture into several baking dishes (we definitely need to buy a larger one) and then topped with more cheese! They then went into the oven until hot and toasty on top.

Matt was a HUGE fan of this one! Nice and spicy, great flavour. I will definitely make this again :) Here's a last minute picture I snapped before we dived into it...
